Unflavored whey is a protein powder derived from dairy, which replaces the protein bonds which gluten forms. It helps create baked goods which are fluffier and lighter. It is added to a number of keto baking recipes, so I now consider it an essential ingredient to have on hand.

WHY I RECOMMEND THIS

I did not have this in my pantry before I began the keto diet, but I have now learned that it is an essential for some keto baking recipes. It helps take the place of the gluten that is lost when you replace wheat flour.

WHY I RECOMMEND THIS

As I said above, I had some reservations about switching to sugar alternatives. In the beginning of my Keto journey I went without sweeteners for a while and just did without the taste of sweet. But little by little I started branching out in my cooking and eating and experimenting with baking and learning how to alter recipes to make them Keto-friendly... enter Lakanto's Monkfruit Sweetener. Out of all the sweeteners that I have tried this is what has become my personal choice for a white sugar replacement. I use it in almost all recipes calling for white sugar and have it in my coffee every morning.

I love that it is a natural alternative to sugar. The monkfruit, or luo han guo, was discovered in China over 1,000 years ago by the Luo Han monks. It was believed to be the secret to longevity, named "the immortals fruit". Lakanto's monkfruit sweetener looks like, measures like, and acts just like sugar. The best part? It has no calories and no carbs! I sometimes wonder how much healthier everyone would be if they switched to this instead of sugar.

I use this sugar replacement in virtually everything that calls for white sugar. There are some instances where other replacements may act better, ice cream and frozen recipes for example. But for a go-to everyday white sugar this wins for me.
